PETA in India

I was not aware of PETA, when I was growing up in India, nearly two decades ago.

India - Land of Mahatma Gandhi, is home to millions of suffering cows, and dogs . Whenever I visit India, I feel so sad seeing cows eating plastic bags.

These days PETA is doing awesome job in India. Thanks to PETA, Indians are seeing the suffering of milk producing cows in dairy farms, and the suffering of animals in zoos. PETA also has exposed the cruelty of leather industry.

Meatless Monday

Many people concerned about the environment are eating less meat. United Nations is urging people to eat less Meat. Numerous towns and cities across the world are encouraging "Meatless Monday".
Los Angeles Times publishes meatless recipes every Monday. Meatless Monday is a global movement, encouraging people to try plant-based food.

Thanks to Meatless Monday, thousands of people are getting used to tasty and nutritious plant-based dishes. Fortunately,  meatless entrees is available in most of the restaurants.

An Open Letter to Prime Minister of India

Dear Prime Minister,

Wish You A Very Happy Independence Day . India is really very fortunate to have you. I'm confident that you will take India to a higher horizon of peace and prosperity.

I was so happy to know your inclination towards plant-based diet. I read in an interview that you like Vegan fare - Khichidi, Bhakri, Poha, Idli and Dosa . I felt very uncomfortable when I read that "curds" is part of your diet. Unfortunately, all the milk products, everything from butter to ghee and curds to paneer causes pain and suffering for the innocent cows. In India milk producing cows are induced with oxytocin harmone to produce more milk. In short, the condition of cows is heart wrenching.

Mahatma Gandhiji , Father of the Nation, stopped consuming cow's milk after he came to know about a cruel process known as "Phooka".  Gandhiji in his autobiography writes, "Since I had come to know that the cow and the buffalo were subjected to the process of Phooka, I had conceived a strong disgust for milk." Gandhiji started to drink goat's milk because plant-based milk such as soya milk , almond milk , rice milk was not available.

Last year, I visited Hagalavadi, a village in Karnataka. My cousins told me that farmers regularly inject cows with oxytocin harmone to cows so that they can produce more milk. The lifespan of the animals injected with oxytocin is drastically reduced. In short, cows are treated as "milk machines" in India and across the world.

Dada J.P.Vaswani , a spiritual leader from India , in a interview says, "I now take soy milk instead of cow's milk because the cows are very cruelly treated in factory farming. Ever since I learned about it nine or ten years ago, I gave up milk. I believe it's the food of violence. The cows are confined to a small area. They can't move and are just milk manufacturing machines,"

Recent studies have shown that dairy milk is causing everything from common constipation to Cancer. The dairy milk available in India is brimming with chemicals. I roll my eyes whenever Ayurveda doctors say that cow's milk and ghee is nectar. The Academy of Nutrition and Dietetics and American Academy of Pediatrics (AAP) agree:Well planned vegetarian and vegan eating patterns are healthy for infants, children and adults. Recent studies have shown that a plant-based diet (Vegan diet) reduces the risk of heart disease , stroke and cancer.

Dr John Mc Dougall , a Physician and nutrition expert says that dairy is "liquid meat". People generally have the notion that dairy milk is rich in calcium and other nutrients. Actually, it is possible to get all the nutrients - calcium, proteins, vitamins in a plant-based diet. A diet rich in vegetables, fruits, nuts, beans and legumes is best for the body. Milk and milk products is  not only bad for our health, but it is also bad for our environment.
According to United Nations, Livestock Long Shadow report, meat and dairy industry is causing global warming. United Nations is urging people to eat less meat and dairy. Meat industry, egg industry, leather industry and dairy industry is not only causing pain and suffering to million of animals, but also causing everything from water pollution to land degradation.

Many people assume that I thrive on salads and fruits, whenever they come to know about my vegan diet. I love food! Growing up in Bangalore, I relished eating "curd rice". These days I made dairy-free curd using peanut milk or cashew milk. I really enjoy eating dairy-free curd rice. Dr. Rupa Shah has a youtube video on making vegan yogurt using peanut  milk and rice milk. At present I'm in United States and it is really easy to thrive on vegan diet. I make kheers and carrot halwa with home-made almond milk. I sometimes use coconut milk or rice milk to make kheers, and variety of Indian sweets. I also make awesome vegan cakes, cupcakes and muffins without eggs and dairy products. At stores I get variety of icecreams made with coconut milk and soy milk. I also enjoy eating delicious vegan chocolates. My husband and son relish eating pizza  with vegan cheese.

It is great to know that the concept of vegan diet (meat and dairy free diet), is growing slowly in Indian cities.  Thanks to the social media - blogs, facebook and twitter, the suffering of cows and other millions of animals is exposed, and people are looking for meat and dairy alternatives.

I think the number of vegans in India will increase by many-folds if meat alternatives and dairy alternatives, such as tofu, tempeh , seitan (wheat meat), soy milk, rice milk, and vegan butter is easily available across Indian towns and villages.

The world is moving towards vegan diet (cruel-free diet). For centuries India has been known as Vegetarian Paradise. I hope under your leadership, India will become a "Vegan Paradise".

Easy Vegetable Biryani

 I love vegetable biryani and vegetable pulav. In restaurants, they usually add lot of butter and the flavor of the amazing spices is missing. If you like rice dishes, you should try Easy Vegetable Biryani and Vegetable Pulav.

These days I'm making rice based dishes atleast twice in a week for my son's lunch box.

Americans who love Indian food, but are overwhelmed with variety of spices, should try this recipe. Just make sure you use -cloves, cardamom, cinnamon and chilli powder.

I also made Vegetable Pulav, by following Shilpa's recipe in Aayi blog . Vegetable Pulav was green in color and was really very tasty. My son who is a picky eater, also liked it!

In a few weeks, I plan to make Vegetable Biryani and Vegetable Pulav, with quinoa instead of white Basmati rice. Or I should I try using 1/2 cup of Basmati rice and 1/2 cup of quinoa , instead of 1 cup of Basmati rice. I hope my son likes it!

On sunday, I made Almond Cashew burfi . It was really good. I used vegan sugar - sugar in the raw . If you have a sweet tooth like me, you will love this burfi.

A Vegan in India

I'm off to India, to visit family and friends. India is a paradise for vegetarians, and I hope India will be a "vegan paradise" in few years.

In India, the concept of vegan food is in initial stage. India is a land where milk and milk products are not only used for making sweets and some popular dishes such palak paneer(spinach with Indian cottage cheese) and Mutter paneer(peas with Indian cottage cheese), but it's also used for religious ceremonies like abhishekam(cleaning the idols).

If you are a vegan and planning to visit India, then it's really possible to explore the wide variety of beans, lentils , vegetables and spices in Indian cuisine. Just make sure not to order any of the dishes which contains the words, paneer(Indian cottage cheese) , dahi (yogurt), thayir (yogurt in tamil language) and malai(cream). Most of the Indian sweets which you get in restaurants is made up of milk or milk products, so the sweet which you get in the vegetarian thali(complete meal) is not suitable for vegans.

Happy Cow

Even though the number of vegetarians and vegans is increasing every day, it's hard to find a vegetarian or a vegan friendly restaurant, if you are visiting a new city.

Before visiting a new city, I always make it a point to visit the wonderful website Happy Cow.

Happy cow lists all the vegetarian and vegan restaurants when you enter the zip code of the place you are visiting. Happy Cow also lists all the health food stores, vegan-friendly and vegetarian-friendly restaurants.

So even if you're not a vegan or a vegetarian, visit Happy Cow - amazing website to find good food.

Vegan Oatmeal Raisin Cookies

It's been a long time since I made some cookies. Today I made some vegan oatmeal raisin cookies. These cookies were so crunchy and tasty. I felt as if I was eating delicious coconut cookies from Bangalore bakeries.

Madhuram uses flax seed meal as one of the ingredients. I did'nt use it in the recipe since I don't buy flax seeds.

I recently read a book, 50 simple steps to save the earth from global warming.

How can vegetarian diet reduce global warming?

According to a report published by the United Nations Food and Agriculture Organization, the livestock sector generates more greenhouse gas emissions as measured in CO2 equivalent – 18 percent – than transport. It is also a major source of land and water degradation.

A vegetarian diet devoid of animal products, is the most eco-friendly diet. A plant based diet, also known as vegan diet is not only good for our health, but also great for our planet because, factory farms intensively confine millions of animals, the toll of such industrialized practices weighs heavily on the environment, depleting resources and contaminating habitats across the world. Toxins, chemicals, gases, and huge amounts of manure from these facilities pollute the soil, water, and air, causing massive environmental degradation.

Today is India's independence day. Mahatma Gandhi played a key role in India's freedom struggle. The principles of ahimsa - nonviolence, initiated by Gandhi was the foundation for India's freedom struggle against the British.

I sometimes feel that Mahatma Gandhi would have thrived on a vegan diet if he was alive, as you can find diary-free milk in India these days. I'm sure
there will be many vegans in India, if many diary alternatives such as rice milk, almond milk, soy butter, nut butters, vegan chocolates and vegan ice cream is widely available.
