India is a paradise for Vegetarians , and the staple food for millions of Indians is simple vegetarian food. In south India, rice, Sambar (spicy lentil soup), poriyal (vegetable dish), kootu (mild lentil and vegetable gravy) is nutritious and tasty. In north India, flat breads (roti or partha) is usually eaten with vegetable dish. Indian cities and towns are brimming with numerous vegetarian restaurants. You can get delicious vegan fare in vegetarian restaurants. Just make sure to order dishes without ghee (clarified butter), Dahi (yogurt) , Paneer (cottage cheese) and milk based dishes.
