The Chicago Diner





I had been to the famed Chicago Diner last week with my husband. They have a wonderful array of vegetarian
and vegan dishes. Every dish on their menu can be
veganised.

I had Burritos and the filling was fried seitan. The
cheese which was made with nutritional yeast was
delicious. I was in a state of bliss while eating the
delicious vegan fare - burritos and the mexican rice.

My husband had Black beans and rice. Brimming with
veggies and grilled tofu, this vegan dish was also
delicious.

To answer your question, I buy vital wheat gluten at Whole Foods (do you have one?). They sell it in bulk there so. But most health food stores carry it, too. Also, baking sites (like King Arthur Flour) also sell it, since it helps breads rise higher. Good luck!

Looks delish! I have not made many vegan cheesy recipes yet...BTW- I saw your query about gluten flour for seitan. I buy vital wheat gluten at my local grocery store (it might be in the baking aisle), and that is really quick for making seitan. Isa has a good recipe in VwaV, but I think it's also online at her blog(s). I posted on my blog with the steps about how to make it as well. Good luck - if you haven't made it before, it's not that hard and soooo good!

My husband is also a vegan, and we are exploring wonderful vegan items everything from vegan chocolates to exotic flours from past couple of months.

I LOVE the Chicago Diner. I try to make it there at least once a month. Try the Dagwood sandwich or the Reuben the next time you go. So good!
