Vegan Nankhatai, Cookie From India
I loved eating cookies from bakeries while growing up
in Bangalore. The baked goodies which I regularly
savoured came from the nearby bakery, as we did not
have a oven in my home.
When I saw Nankhatai, in Nupur's blog, I wanted to
make those adorable cookies. The recipe sounded
delicious as it also had powdered pistachios. I
followed Nupur's recipe, but veganized it by using,
vegetable oil instead of ghee(clarified butter) and
used Earth Balance Natural Buttery Spread, instead of
unsalted butter.
I simply loved these cookies. I have made these cookies twice in a span of couple of days!

Nankhatais are addictive I tell you.
You know the problem is one has to pay the sky for these Dairy Substitutes/ Alternatives in India.
I absolutely adore nankhatais...and pistachios...your's must taste heavenly.

Vanaspati and dalda are wonderful aternatives to butter and ghee.
I think some of the bakeries and sweet shops use only vanaspathi and dalda to cook sweets and baked items, as ghee and butter is very expensive in India

I just bought Earth Balance for the first time the other day for my hubby. Haven't tried it yet.
Looks absolutely good. I've not heards about this cookie, but the pic has got me convinced to try it. Looks yummy.

Yes, biscuits indeed! 'Butter Biscuits'! I was of the opinion that it was a Gujrati delicacy, but my mom vouched for the common 'Butter Biscuit' tale.

i loove nankhatai..but am scared to make them as i have no control!! i refuse to make 6 -8..i will make at-least 2 dozen adn then proceed to eat easily 6-7 each at a go..i know!! i do suck :(

I wish we could get Earth Balance here. Sadly I am stuck with dairy-free margarine and not quite sure if it's even healthy vegetable oils.

Vegan Meet
I often buy Nankatai from Nilgiris and Food World - tey're the only vegan ones I've found. But I feel so guilty eating them since they're loaded with hydrogenated vegetable fats which are terrible for health!
This recipe looks awesome! I want to try it for sure!!
There's only one little issue.... I have no clue where to find a vegan butter replacement in Bangalore!!!
All the so called 'non-butter spreads' are tainted by those %$^#$&* Milk Solids!!!
I know you don't live in Bangalore right now but do you have any idea at all where I can get Earth Balance or it's equivalent here?
