Vegan Chocolate Cupcake
I love cupcakes. Recently I made vegan chocolate cupcakes from the cookbook - Vegan Cupcakes Take Over the World. You can find the recipe for this delicious cupcake by visiting Chow website.
The cupcakes were moist and very tasty. I did a basic frosting consisting of sugar, soy milk and Earth Balance Soy Garden Natural Buttery Spread. The frosting was a bit mushy, but it tasted great.

The frosting may be mushy, but it's probably a lot healthier than the "butter"cream ;)

I just purchased Vegan Cupcakes Take Over the World for a random drawing during my blog event, and now I want a copy for myself. It's bursting with pretty little treats that I can't wait to try. I'm encouraged that your chocolate cupcakes came out so well.
