Pav Bhaji( Spicy Vegetables and Buns)

Pav Bhaji is a very popular street food in many states across India. I recently made Pav Bhaji following Susan's Pav Bhaji recipe. I just used potatoes, carrots , bell pepper along with onions and tomatoes to make the spicy vegetables. I think the key for the wonderful taste of this dish is to pressure cook the vegetables until soft.

Traditionally Pav Bhaji is served with a dollop of butter, so you can use
Soy Garden Natural Buttery Spread or Earth Balance® Margarine Natural Buttery Spread.

yum!..one thing on pav-bhaji is it is basically vegan without that addition of butter the pav. If i get bakery fresh pav..i have always omitted the butter..it makes no difference to the yumminess,,,

Hello, I'm an Australian vegan who may be living in Chennai for a few months to help with an aid project.
I was just wondering if you had any ideas about getting by and eating out as a vegan in chennai, what to bring, how to explain veganism, etc. Any info at all would be incredibly useful. thanks a lot, debra

Debra,

It's great that you're visiting India!

If possible go only to vegetarian restaurants, as you can find numerous vegan options there. Talk to the managers of the restaurants, that you avoid milk and milk products such as ghee and butter-milk. In general don't eat any dish which is which in color. Most of the payasams(sweet puddingd) in southern iNdia is made with milk.

Big supermarkets like food world are great to shop for vegan stuff, as the staff can communicate in English.

You can explain about explain veganism by talking about the torture endured by the diary cows. Farmers in India inject their cows with oxytocin harmone. http://howrah.org/india_news/14710.html

You can also talk about that the Mahatma Gandhiji refused to take cow's milk after he came to know about the cruel process known as
