Vegan Mysore Pak

In southern India, almost all the sweet stores will
have bright yellow mysore pak. Mysore pak is made from
chickpea flour, sugar and oil. At homes and in some
famous sweet stores, ghee is used instead of vegetable oil
in the preparation of mysore pak.

I recently made mysore pak and it tasted great. I
followed Mahanandi's recipe, but used vegetable oil.I
also roasted the chickpea flour until the raw smell of
the flour vanished.

Another important factor is to make sure that the
sugar syrup is of the right consistency before adding the
chickpea flour.

Oh my god, I remember having mysore pak at Divali, and Dusera, and pretty much every other holiday that I could convince my mother to take me to the sweets store!

and just a couple of days back i was wondering how vegans could make mysoor pak!!! this is indeed wonderful :) - it looks quite yummy

In the original version of the recipe, the proportions are quite different and it is much harder to get a nice tasting whole "melting in mouth" mysoor pak. In my observation to prepare this, the timing of taking off from heat and tranferring to the plate (padam as it is called in tamil) is most important in mysoor/mysore pak. Ghee is added a little at a time while stirring the flour and sugar syrup together. For years I have seen my Paati and Amma make this recipe - it has never tasted raw and has always melted in my mouth. :D

OMG this is THE yummiest sweet that I had t give up after turning vegan.
I never thought oil would work (figured I would need earth balance or the equivalent which of course I don't get at Bangalore).
I have GOT to try this!! :D

I think it is always great to have the recipe, but also add a special touch that will give identity to the plate. your little changes on the original recipe were absolutely bright! I think I will do it the same way.
