Christmas is all about snow, family and friends in North America. I just love to see the colorful lights, decorated christmas tree and eat yummy cakes and cookies.
Today, it's possible to relish Christmas vegan fare from Atlanta to New Delhi and Dubai to Sydney. Almost all the supermarkets across the world carry soy milk, almond milk, vegan cream, vegan butter, and egg alternatives...

Growing Number of Vegans in United Kingdom
According to latest news report," the number of vegans in Britain has risen by more than 360 percent over the past decade" . I was so happy to read it! Yes, Brits are really smart...
Vegan diet is going mainstream in United Kingdom. Many Brits are going vegan because it is good for their health. Brits concerned about global warming and animal suffering are also going vegan. It is really so nice to see that United Kingdom - Land of fish and chips , is embracing Vegan diet (Plant-based diet ).

Vegan Applesauce Cake
Few days ago, I baked Applesauce Cake by following the recipe in Vaishali's blog, Holy Cow. The cake was awesome, it tasted so much like fruit cake or plum cake found in Bangalore bakeries.
The cake was light brown in color, and bursting with cinnamon and cardamom flavors. The walnuts tasted so good in this cake...
I'm sure I will bake this cake many times. Next time, I'm planning to add raisins, plums, and cashews.

Vegan Fruit Cake

I adore fruit cakes. Growing up, I vividly remember buying fruit cake from bakeries, near my school in Bangalore. Brimming with dried fruits and nuts, fruit cakes from Bangalore bakeries were moist and very tasty. Fruit cake is also called as "plum cake" in India. Since I was not a vegan decades ago, I used to relish eating fruit cakes loaded with eggs.
Recently I saw a recipe for fruit cake in one of my favorite food blogs, aayi. I was very happy to find a fruit cake recipe which was very easy to veganize. I used soy garden natural butter spread instead of butter.
The fruit cake was delicious. I felt as if I was eating the fruit cake, from Bangalore
bakeries. I'm sure I will often make this cake.
