Richa Hingle , Indian - American Vegan Food Blogger

Richa Hingle blogs about delicious and nutritious vegan dishes in the blog - Vegan Richa. The blog Vegan Richa inspires people to try plant-based fare (vegan fare). Richa is the author of the amazing vegan cookbook, Vegan Richa's Indian Kitchen. You can find delicious recipes for vegan gulab jamun , and vegan ras malai.

In an interview Richa says, "I chose to be vegan when I realized how I was giving profound love and compassion to one animal (my adopted dog) and causing death, and eating another animal or animal product,” .

Richa says ,“Meat and dairy industries are not only responsible for torture and death of 59 billion animals per year, but they also affect the environment, the planet, and one’s own health. Animal agriculture is the leading producer of greenhouse gasses causing climate change, much more than fossil fuels.” You can read the full interview here, http://www.india.com/food-2/food-blogger-richa-hingle-on-creating-vegan-recipes-for-the-indian-american-audience-1034882/

Vegans in India

Milk and milk products such as buttermilk and ghee play an important role in Indian cuisine. Whenever I visit India, and when I say that I don't consume milk and milk products, everyone feels that something is seroiusly wrong with me...

While it's very common to be a vegetarain in India, the concept of vegan lifestyle is still in an initial stage. Thanks to Peta and other organizations, people are now starting to think about the cruel production of milk in India. Oxytocin harmone is induced to cows to produce more milk in India.

I read a wonderful article about the growing number of vegans in India in Outlook magazine. Read the article - Sylph O’ The Green here .

The American Dietetic Association states that "appropriately planned vegetarian diets, including total vegetarian or vegan diets, are healthful, nutritionally adequate and may provide health benefits in the prevention and treatment of certain diseases. Well-planned vegetarian diets are appropriate for individuals during all stages of the life-cycle including pregnancy, lactation, infancy, childhood and adolescence and for athletes."

So go ahead and try to become vegan! Vegan diet or plant-based diet is not only good for your health but also great for our beautiful planet - Earth.

Pav Bhaji( Spicy Vegetables and Buns)

Pav Bhaji is a very popular street food in many states across India. I recently made Pav Bhaji following Susan's Pav Bhaji recipe. I just used potatoes, carrots , bell pepper along with onions and tomatoes to make the spicy vegetables. I think the key for the wonderful taste of this dish is to pressure cook the vegetables until soft.

Traditionally Pav Bhaji is served with a dollop of butter, so you can use
Soy Garden Natural Buttery Spread or Earth Balance® Margarine Natural Buttery Spread.
